As our Executive Chef and Director of Culinary Enrichment Kathryn Kelly and her team of Chef Instructors have traveled and explored the markets and epicurean hot spots of the Baltics, they’ve developed a true love for the culinary trends and traditions in this corner of the world.  Their passion for Nordic specialties, culinary heritage and local ingredients shines in this newest set of Culinary Discovery Tours. Here’s a quick look at our four exciting new tours in the Baltics.

Helsinki, Finland

Chef Market, Harbor Tour & Savoy Lunch

Delve into Helsinki’s surprising gastronomy by sampling an unusual array of savory foods as your Culinary Center chef provides enlightening commentary. In a market abuzz with locals browsing the endless delicacies, discover how Swedes, Russians and French have influenced Finnish cuisine. Later during a harbor cruise, historical trivia whets your appetite for the sampling of distillery spirits. Lunch at the opulent Savoy Hotel opens with the classic appetizer Vorschmack, a concoction of minced lamb, pork, anchovies and herring served with wildly eclectic garnishes and paired with honey-flavored beer.

Chef Tour with Lunch, Caviar & Spirits Tasting

Stimulate your inner foodie with a jaunt through the Eliseyev Emporium, an architectural gem as sumptuous as the delicacies within the market’s storied walls. With this snapshot of St. Petersburg’s epicurean diversity firmly in mind, head to the bar Caviar Russia with your Culinary Center chef. In this contemporary setting, sample several varieties of caviar paired with ice-cold vodkas that balance the roe’s salty decadence. Think of it as the overture to the luncheon opus to follow at the Astoria Hotel. As you dine on three courses, complemented by Crimean wines, the chef describes the preparation of the dishes.

Tallinn, Estonia

Tallinn’s Emerging Gastronomy Scene

Delight in Modern Nordic-inspired cuisine with a side of historical enlightenment as your Culinary Center chef accompanies you on this dining and sightseeing escapade. The fun begins with coffee and a treat at Kadriorg Park, which was once part of Peter the Great’s summer residence. A sampling of seafood such as Baltic herring awaits you at the Viimsi Open Air Museum, a re-creation of a historical coastal village. Your culinary immersion crescendos at the restaurant ORE in Old Town, where you will enjoy a four-course lunch of seasonal dishes influenced by numerous neighboring countries and conquerors.

Visby, Sweden

Meet Local Farmers & Greenhouse Lunch

Discover how local foods are ingeniously sourced by visiting two farms that redefine the Swedish farm-to-table experience. As preparation, your Culinary Center chef offers insight on Gotland Island’s micro-cuisine on the way to Ejmunds Farm, where you learn how the owners humanely raise cattle to produce a unique Kobe-like beef. At Lilla Bjers Farm, explore the ways in which the farm practices organic, sustainable farming methods. The farm’s greenhouse offers a delightful setting for a multi-course lunch of seasonal dishes, which crowns your culinary experience.
